Sunday Prep!

Hi, everyone!!! I hope you had a nice weekend.  I spent a good chunk of today grocery shopping (Trader Joe’s and Whole Foods) and cooking to get ready for the work week ahead!  Here’s a peek at the meals and snacks I’ll be eating this week.

Kale & Bacon Quiche with Hash Brown Crust….again! I just can’t help myself.  This recipe is so good and with some fruit and coffee, it’s a filling and healthy breakfast.  It also reheats great!

Pumpkin Baked Oatmeal Bites  I haven’t had the chance to taste these yet (they’re just out of the oven!), but I mainly decided to make them because they contain simple ingredients that I already had on hand.  I’m planning on maybe crumbling then on top of greek yogurt, or topping each muffin with almond butter for a snack.

I’m going to roast a spaghetti squash Tuesday night to eat with sauteed garlic shrimp and roasted brussel sprouts.  Leftover spaghetti squash will be used for lunches with soup and some type of protein.

Buffalo Chicken Chili is on the menu for lunches and dinners later on this week, served with Great Harvest jalapeno cheddar bread.

Some other miscellaneous items I picked up at Whole Foods:

-Luna Bars (they were on sale for 99 cents so I stocked up my favorites like chocolate coconut and carrot cake)

-Siggi’s yogurt (coconut) these were also on sale

Blackened chicken salad to be eaten for lunch on a bed of romaine

    1. How did the pumpkin bites turn out? Were they worth the effort? I might give them a try since I have the ingredients.

      1. They’re really good with peanut or almond butter on top. Otherwise, they aren’t really sweet enough. I would add maybe a tablespoon of honey or maple syrup to the batter if you don’t plan on adding nut butter.

    1. I’m going to have to Kale Bacon Quiche!!! It sounds and looks really good. And of course you have some sort of buffalo chicken recipe haha. Thanks for the meal ideas Piks!
