Sunday Prep 11/10/13

Hi, friends! I hope you had a wonderful weekend 🙂  Mine went by way too fast, as usual.  Since I’m not able to get in as much cardio as I would like during the week, I made that a priority over the weekend.  A 3 mile run yesterday and a 2.5 mile walk on the treadmill today while watching Shahs of Sunset! Even though I was feeling pretty lazy for most of today, I took the time to meal plan and prep!  Here’s what’s on my menu this week:

Breakfast:

Rudi’s Gluten Free Cinnamon Raisin Bread + bacon + scrambled eggs + fruit

Lunch:

Skinny Taste’s Chicken Cordon Bleu + PaleOMG stupidly simple sweet potatoes + sauteed kale

*I’m hoping to eat the same thing for lunch all week.  Yes, it gets boring but it makes packing my lunch each night a lot easier.

Dinner:

Ground Turkey taco salad (romaine, shredded cheddar, tomato, avocado, salsa)

Honey Mustard Pork Chops + brussell sprouts

Snacks:

Blueberries

Pineapple with cottage cheese

Tone It Up’s Pumpking Pudding (a crock pot recipe! My favorite kind)

    1. I’m prepping tomorrow so I only have a few things in mind so far. It’s getting cold this week so I’m gonna make slow cooked 3 bean chili with ground turkey. I’m really focused on upping my protein so I’m trying to incorporate peanut butter into all my snacks. Oatmeal and a protein shake for breakfast and Grill chicken spinach salad and soup for lunch. And my highlight of the week will be homemade apple crisps or turnovers depending on how I’m feeling. That’s the rough draft so far…

      1. mmm peanut butter. I just bought an extra jar of White Chocolate Wonderful to keep in the office. Udeme, I hope you plan on sharing your recipe for the shrimp you made last week!

        1. Yea, peanut butter is the best thing ever. And yes, I do! I’m making it again this week, gonna see what the sauce tastes like with spaghetti squash 🙂

        1. See and I don’t even like peanut butter that much…I’m just forcing myself to eat for the additional calories.
