We want to extend a welcome to our new readers to Chasing “Skinny” and say thank you for stopping by and reading! It’s been great sharing our content for the past months. Here’s an update from me: I’ve been keeping up with my “Get Shredded” workout routine (Phase 1; Phase 2) along with a meal plan that I hope to post about soon; I’m feeling better than ever. I wanted to share a recipe with you all that I adore: the broccoli and feta cheese omelette! I have also substituted feta cheese with a serving of Mexican blend shredded cheese before; that tastes great as well. Here is the recipe to this quick and easy meal:
What you need:
- Cooking spray
- 1 cup chopped broccoli
- 2 large eggs, beaten
- 2 tablespoons feta cheese, crumbled
- 1/4 teaspoon dried dill
- (You can also add other seasonings to your liking; I like to jazz up my eggs)
What to do:
1. Heat a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli, and cook 3 minutes.
2. Combine egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast. (I eat this meal with a slice of Cinnamon Raisin Ezekiel bread).
