Hi, everyone! Happy Monday! After watching the Lions lose to the Steelers yesterday, I was in a no mood (okay, and a little buzzed) to grocery shop and cook. So, I planned on eggs for breakfast today and grabbed a frozen dinner to have for lunch. When I got to work this morning, the power was out! We had a lot of high winds and storms yesterday. So, I was sent home and I now have the time to meal prep for the rest of the work week!
-scrambled eggs with cinnamon raisin toast and pineapples
-veggie omelets topped with avocado and toast
-love grown hot oats (for the days I go to the gym in the morning instead of working out at home) with a hard boiled egg
-taco salads (ground turkey, corn, black beans, wholly guacamole, salsa for dressing)
-Apple butter pork chops (using Trader Joe’s Cranberry-Apple butter, going to use this recipe as a guide) with sweet potatoes and some type of veggie (I’m thinking either brussell sprouts or broccoli)
-surf and turf date! Making dinner with my fiancee. Flank steak, steamed lobster tails, roasted potatoes, and broccoli
-fruit (apples and pineapple)
-KIND bards (just found the dark chocolate and sea salt at my grocery store!)
-Skinny Pop sprinkled with cayenne
