“Healthified” (Flour-less) Peanut Butter Chocolate Chip Cookies

I have a great cookie recipe for you friends! It’s the perfect treat for when you’re craving something sweet and satisfying. And luckily, it doesn’t take long to make at all because there are minimal ingredients. I LOVE peanut butter (case in point, exhibit A and B) so this is one of my go-to recipes when I want something guilt free and yummy. I saw this recipe a long time ago from @Tameikag on Instagram and I’ve made one major tweak since I originally published this post which I’ll let you in on below. Without further ado:

Healthified Flourless Peanut Butter Chocolate Chip Cookies Recipe:
pb-cookies-updated

Ingredients

Peanut butter cookies

*1 Cup of peanut putter (I used an unsalted + organic brand from Trader Joes)

*1/3 Cup of honey

*1 whole egg

*1/2 Teaspoon of baking soda

*1/2 Teaspoon of sea salt

*1/2 Cup of chocolate chips

*1/2 Cup of oat flour (optional, see below)

What To Do (Directions)
[OPTIONAL STEP, updated 10/2016: Take a half a cup of rolled oats and pulse the oats until it is the consistency of flour. Add these oats into the bowl after mixing the rest of the ingredients. This oat makes the dough less sticky and therefore easier to roll into balls. If you don’t have any oats on hand, not to worry. It still works fine!]

Set your oven to 350 degrees. Mix all of the ingredients in a bowl, ball up pieces of the dough and spread them out evenly on a baking sheet. Cook for 10 minutes.

Then, let them rest for 10 minutes and devour (some). This made about two dozen cookies (with the addition of the oats, it made a little over a dozen cookies).

Option, you can use a fork to make the indentations before or immediately after baking.

Warning, these are highly addictive and therefore batches go FAST. Enjoy!

        1. I tried them this morning. Instead of adding chocolate chips I added cinnamon because I love its taste with peanut butter. Anyway, the cookies were delicious!!!
